It's about 3 months late, but thanks for the replacement grates that you sent back in November. They are perfect.

I had told a friend about the smoke generator and he purchased one about a month ago (he is in Forest, VA). He is using his about 3 times a week and loves it.

I noticed that his smoke daddy was one that had the new back draft design. I had read in a couple of forums where people had concerns with creosote and tar buildup and that the backdraft design helped to address this.

It got me thinking, so I modified the Big Kahuna that I have to the new backdraft design...based on the one that my friend purchased. I must say that the change made a world of difference. I have always used seasoned wood chips/chunks and in the past did get a lot of tar and creosote (with the old design). Since the modification, there is virtually no tar or creosote buildup. Even when cool, the top and bottom comes right off. It even seems to burn longer, better, and give more smoke. Great job with the new design!!

One of the things that makes the smoke daddy so great is that it allows us Do It Yourself people to still be creative. Even though the smoke daddy is doing most of the work, we can still build our smoker the way we want it and take most of the credit. Thanks again for a great product! I have a blast every time I use mine.

Sorry to keep bugging you.

I would like to add one more thing about the smoke daddy. A lot of people talk about the "Thin Blue Smoke". It is definitely achievable with the smoke daddy by just cutting back the air intake. Even with the old design (prior to the back draft design), I don't recall anything that I have ever smoked being bitter or off tasting...no matter how much smoke or what kind of smoke was being produced with the smoke daddy. The new design does burn cleaner, which will in turn, give better smoke. I love being able to control how much or little smoke I want with a simple air adjustment. There is no other smoke generator that I would even consider after using the smoke daddy.

I have attached a photo of my smoker set up. I have a vertical gas smoker with the Big Kahuna smoke daddy attached, and a hot-plate down the bottom. I have used this to smoke for periods of 4-6 hours. I have made a really nice slow smoked brined pork, and I made a fantastic turkey at christmas with hickory - everyone couldn't get enough of that turkey it turned out so well. Lots of other things like mesquite salmon and ribs and things. The smoke daddy has made it easier and more precise to smoke a large variety of meats for longer periods. So I am looking forward to the Magnum P.I.G. so I can extend the smoking time. I have also attached my testimonial, I tried to keep it brief. I hope it reads well. Keep up the good work!


After much research and cold smoker hunting, I came to the conclusion that the Smoke Daddy series of cold smokers are the best option available on the market. This is due to a number of factors, some of which include:

* The build quality is high:

The Smoke Daddy cold smokers are manufactured out of large machined pieces aluminium, providing a robust construction that will last. The mounting apparatus is simple and straightforward in comparison to others; all I needed was a drill to install it on my smoke box and my grill.

* The flexibility is high:

With other cold smokers available, you are pretty much locked in to purchasing their pre-formed wood pellets and cartridges that limits your diversity. I am able to pick up any sawdust, chips or pellets that I come across and use them in the Smoke Daddy. Many other cold smoker designs can only burn sawdust.

* The price is fair:

Compared to other solutions, the Smoke Daddy is very competitively priced. Other very similar solutions I have found are manufactured cheaply overseas and then have a significant retail mark up, along with an inferior design.

* The design is efficient and easy to use:

I can smoke meat at low temperatures all day by simply topping up the smoker. No need to open the smoke box and release the heat and smoke. It does not contain any electric parts, like a controller, all that is required is the air pump and a torch for ignition when you start. Other similar designs do not have the same combustion area or high smoke output and can go out easily.

I purchased the Big Kahuna a little over a year ago, and I have been using it successfully since then. I have now upgraded to a Magnum P.I.G. for longer smoking periods.

Even in Australia, it is still the best option available to the consumer.

This is the Best Thing ever made. I use my Big Kahuna every weekend. We do alot of smoking. I have been smoking and been around smokers for about 30 years. I am so impressed with this product, I have told other people that I smoke for to purchase this. Since my life has gotten busier it was harder to do what I love to do, but since I bought the smoke daddy that has changed. I am now able to do more smoking than I have been able to do before. I use electric smokers at home, great for cooking, and perfect heat control but have never had enough smoke, but since I found the Smoke Daddy It made electric smokers absolutely Perfect. I just received the 8 inch Smoke Daddy yesterday. It only took about 10 minutes to hook up. I dropped in my chips, lit it with the propane torch like you said, and man it makes some great smoke! I've been wanting to cold smoke food for years, and couldn't afford the high dollar smokers that are available. This thing ROCKS!!! I'm going out tonight to buy a piece of salmon so i can start to cure it then smoke it in a couple of days. Thanks Dennis for such a good product.

Smoke Daddy,

Awesome product. Just got my new Smoke Daddy Big Kahuna and had to instantly stop what I was doing to install it on my Brinkman propane smoker, which took a whopping 5 minutes. Didn’t have anything to smoke today but just had to try it out. I put some chips in and lit it with a torch for about 30 seconds and WOW here comes the smoke! With only a small handful of chip it smoked for over a half hour and then I though, hmmmm what happens if I just add a few more wood chips and poof…..more smoke.

I originally bought this to cold smoke but one of things I hate about my current smoker is that I get about 1.5 hours of smoke then have to replenish the chip dish. I have gotten pretty good at it but it still takes about 15 minutes without any smoke and it is quite a messy production to deal with the hot chips so what a surprise to be able to simply add more.

I am now thinking why not just abandon the chips in a pan concept and use the Smoke Daddy for hot smoking too! Much easier.

Hi Dennis,

Have used the Big Kahuna on my propane smoker with great success for cheese, fish, ribs, canadian bacon and sausage. You have definitely hit a "home run" with this product. It allows me to use the propane to just control the temperature, which improves consistency and prevents flare ups due to the wood chips catching fire. I am in the process of building a homemade smoker and will use the Big Kahuna to provide the smoke for it. I am thinking of using 110 volt electric and a thermostat to control the temp. Any ideas where I can acquire an element and 110v oven thermostat or something similar for this plan.

This Larry Wendel of St.Marys Pa. I e-mail you a couple of days ago about your pellets, just got done smoking jerky and sausage. I see you have a new larger cold smoker how long does this one smoke? Have you ever smoked eggs I always wanted to try that. I love that small cold smoker that I got last year. Can finnaly smoke cheese with out making string cheese. Thanks again Larry

Mr. Dennis Correa. ............ I am more than satisfied with the "Big Kahuna" cold smoke generator I purchased from you. This is the first time that I smoked Cheese and was more than pleased with the results. I have smoked Ribs and Kielbasa a few times. My smoker is a Sausage Maker 50 lb. Electric smoker which I purchased from the Sausage Maker located in Buffalo, NY. Since the smoker is quite heavy, I built the dolly, so I can move it with ease. I wanted to say thank you so much for sending me the new smoke daddy! The new improvements are considerably better. I've done several batches of bacon, sausages, smoked tongue, canadian bacon, and smoked salmon. All of which were done with ease. Being able to easily disconnect the smoke daddy to clean it is a huge convenience. The new lid is so much easier as well. I've been telling all of my friends to check out your website. Hopefully this will bring you more business.
